🍜 Ramen Notes

Located inside Azabudai Hills — Tokyo’s newest landmark opened in 2023 — this ramen shop has already become a must-visit spot for ramen lovers and travelers from around the world.

The signature dish here is the Shamo Shoyu (soy sauce) Ramen, especially the “Neo Tokusei Shamo Soba”, which comes highly recommended.
The broth is filled with rich, deep chicken umami, and the toppings include lightly grilled shamo meat and slow-cooked chashu, both tender and bursting with flavor.

For those who don’t eat animal products, the shop also offers Vegan Ramen, available in both soy sauce and tonkotsu-style broths.
The creamy tonkotsu-style vegan ramen has become especially popular among international travelers seeking a plant-based option with authentic Japanese flavor.

The restaurant’s official website provides ingredient descriptions in English, so it’s worth checking out if you’d like to know more about each dish.

Please keep in mind that lunch hours are always crowded, but you can make a reservation via TableCheck (available in several languages).
There’s a small additional fee of ¥390, but it’s well worth it if you’d like to skip the long line and enjoy your ramen with ease.
