The special ramen is generously topped with chashu pork, nori(seaweed), bamboo shoots, mizuna greens, and a seasoned soft-boiled egg. The noodles are slightly thick with a chewy, springy texture that pairs perfectly with the rich broth.
The shio ramen is based on chicken soup and just as satisfying, offering a creamy, smooth, and mellow taste. Despite being salt-based, it delivers a full-bodied chicken umami richness, making it an excellent choice for those who prefer a strong yet refined shio flavor. The noodles and toppings are the same as the shoyu version, allowing you to enjoy the difference purely through the soup.
A unique highlight of this shop is the flavor-changing condiments served by default. The shoyu ramen comes with chili oil, while the shio ramen is paired with stem wasabi. These additions dramatically transform the flavor, so it’s best to add them after eating about half the bowl—or little by little to fine-tune the taste.
Between shoyu and shio, the seafood-forward shoyu has a more pronounced Japanese profile, so shio may be the better option for international visitors. Don’t miss the side dish gyoza(Dumpling), made with premium Kurobuta pork. With its chewy wrapper and crispy grilled bottom, it offers an excellent contrast in texture and is highly recommended.
